Is Your Fish Fresh?

1 Clear Eyes

Look for eyes that are crystal clear, bright, and bulging. Avoid fish with dull, sunken, or cloudy eyes.

2 Red Gills

Lift the gill cover. Fresh fish should have bright red or pink gills. Avoid if they look brownish or gray.

3 Firm Flesh

Press the meat with your finger. It should bounce back immediately. If the indentation stays, pass on it.

4 Ocean Smell

Fresh seafood smells like the clean ocean water. It should never smell foul, sour, or overly "fishy".
